How to use The Roti Maker
Using the Roti Maker is simple. You only need three things to get started: prepared dough, some extra flour and your Roti Maker.
For best results, prepare your dough and let it sit for 15 minutes before preparing. You can follow this quick 7 step guide to make perfect rotis.
Step 1: Turn on the Roti Maker and let the plates heat up for 90 seconds
Step 2: Roll your dough into a ball that is about the size of your palm or your desired size of roti.
Step 3: Toss your ball of dough into some dry flour and use your palms to flatten the ball.
Step 4: Place your dough in the middle of the Roti Maker dish and press down for 1-2 seconds. Lift the plate to see how your roti looks and press it down a second time for 1 second. The first press makes the shape of your roti round and the second press makes your roti nice and thin.
Step 5: Once you are happy with the shape of your roti, let it cook on one side for about 10-15 seconds and flip. Your roti should be partially cooked and the top should have small bubbles forming.
Step 6: Let your roti completely cook on one side facing down now - you should see a lot more air bubbles forming on the side facing up. After about 45 seconds, or when your roti is cooked to your desire, flip it one last time to let the rest of the roti completely cook.
Step 7: Take the top lid of the Roti Maker and close it on your Roti to make it puff up, or you can use a heat proof cloth and press the edges of your Roti until it puffs.
Each Roti should take about 1-2 minutes to prepare and you can spread some butter on the top of your roti to ensure it stays nice and soft.

Roti is a round, flat, unleavened Indian bread. While most Indian restaurants serve naan (a leavened flatbread made with a yeast starter and white flour which is typically cooked in a tandoor oven [1] X Research source ), roti is typically made with wheat flour and cooked on a hot griddle. [2] X Research source It's an everyday bread that's made fresh and eaten with curries, chutneys, and various other Indian dishes. Indeed, roti is often used as a utensil to scoop up other food. It's a delicious, versatile, and surprisingly easy-to-make bread you can bake at home yourself. This recipe will make 20-30 rotis.
Ingredients
3 cups chapatti flour (also known as durum wheat atta) OR 1½ cups whole wheat flour + 1½ cups all-purpose flour
½-1 teaspoon salt (optional)
1 tablespoon ghee or oil
1-1½ cups warm water
Preparing the Roti Dough
Atta/chapati flour is a finely ground whole wheat flour. [3] X Research source It's the traditional choice for making roti.
If you can't find chapati flour or don't have it on hand, you can substitute whole wheat flour. Because it is a heavier flour, though, you should consider using a mixture of half whole wheat flour and half all-purpose flour to more closely approximate the texture of chapati flour.
You may even use only all-purpose flour in the recipe if that's all you have available. If you go this route, though, you may need to use less water. Be sure to pay attention to the consistency and texture of the dough as you mix; we'll explain more about this in the following steps.
Additionally, if you use only all-purpose flour, your roti won't have as chewy and nutty of a flavor as traditional roti.
Ghee is a clarified butter which has been simmered until all of the moisture has evaporated and the milk solids have begun to brown. Ghee has a nutty, carmel-like flavor and color. Ghee has a very high smoke point (almost 375°) and is thus well-suited for frying. It's readily available at Middle-Eastern and Indian markets and specialty food shops, or you can make your own ghee at home. [4] X Research source
Make sure that your hands are clean if you are mixing the dough by hand. If using a mixer, mix on low speed, or if using a food processor, pulse a few times until you see flakes.
Be sure not to add the water too quickly; you don't want your dough to be too sticky or you won't be able to roll it out.
If you are using a mixer or a food processor you may have to stop on occasion to scrape down the sides of the bowl before mixing/pulsing more.
The finished dough should be soft and slightly sticky, though you should be able to peel it off your hand. If it sticks to your hands, it is too wet, and you should add a bit more flour.
The amount of time you need to spend kneading the dough is flexible, and depends upon the strength of your kneading or your kitchen appliance. You are aiming at producing a pliable, stretchy dough that you'll be able to roll out.
Letting the dough rest will result in softer rotis. The gluten you formed during the kneading process will relax, and any air bubbles will have a chance to be worked out of the dough. [5] X Research source
Cooking your Rotis
You can test the heat of your griddle by dropping a pinch or two of flour on the surface. When the flour browns, you'll know that your cooking surface is hot enough.
Most roti recipes recommend heating your cooking surface while you are rolling out the dough. If you are new to this, though, the rolling process may take a bit of time, in which case you don't want your griddle to get too hot or start smoking. If that is the case, you can wait to heat up your griddle.
Move your rolling pin constantly in order to get as circular of a shape as possible. Envision a clock when you roll: Roll up from six o' clock to twelve o' clock, then up from seven o' clock to one o' clock, etc.
Be sure to flip the dough circle regularly so that the underside does not stick to the surface, and be sure to sprinkle more flour on the dough and the rolling surface as needed.
Aim for a circle that is about 6-8" in diameter, but be sure not to roll the dough too thin. If it's too thin, holes will develop or the dough will stick.
Don't be afraid to rotate the roti so that it doesn't stick or overcook in any one area. You can also flip it back over to brown up the other side a bit more.
Depending upon how hot your cooking surface is, you may need to take more or less time in between flips. Pay closer attention to how the roti is browning as opposed to how long it has been cooking.

Flatten a ball of dough into a squashed circle, dust both sides of it with flour, and roll it out on your floured surface until you have a thin circle that’s about 6-8 inches (15 to 20 cm) across. Put the flattened dough in the pan and cook it for 15-30 seconds, or until brown spots appear on the underside. Flip it and cook the other side for 30 seconds. Roti Jala, also known as ‘lace pancake’ in English, is an all-time favourite Malay tea-time snack served with curry dishes. This tasty crepe dish can be found commonly in Indonesia, Malaysia and Singapore. Roti Jala’s name is translated as ‘Net Bread’ because of its lacy and net-like appearance due to how it was made.
Roti Jala is a traditional Malay snack that is usually homemade and served at events and festivals such as weddings and the Hari Raya celebration. Locals love pairing this dish with different kinds of curries, especially chicken curry.
Origin of Roti Jala
The origin of Roti Jala can be traced back to the Malay community. As they were originally fishermen and living by the sea, they took inspiration from the nets that they were using for fishing; and incorporated it into this snack. Roti Jala was also called Roti Renjis or ‘Rinsed Bread’ because of the original method of which it was made; which was by hand and the ingredients would be ‘rinsed’ onto the pan to be cooked.
Roti Jala Recipe
The key to a great Roti Jala is how tender and delicate it is. In this recipe, you will need a special cup with five nozzles to make this crepe snack. However, it is alright if you don’t have these cups. You can go for other Do-It-Yourself alternatives such as using an empty milk can or plastic bottle with punctured holes on the lids.
Ingredients
1 cup/150 g of all-purpose flour
¼ tsp of ground turmeric
¼ tsp of salt
1 egg (beaten)
¾ cup of coconut milk mixed with ¾ cup (180ml) of water
Vegetable oil
First, sift the flour and the ground turmeric into a bowl. Then, add the salt into the mixture.
Next, stir in the beaten egg and coconut milk until a smooth batter is formed.
Then, strain the batter to remove any lumps.
Brush a little of the vegetable oil onto a non-stick pan with medium heat.
Then, pour the batter into the special five-nozzle cup until about half full.
After that, move the cup over the pan in a circular motion to create a lacy and tnet-like pattern. Cook for about 2 minutes.
When it is cooked, slide the crepe out of the pan and onto a plate. Repeat the process until all the batter is used up.
When the finished crepe is cool enough to handle, fold in both sides of the crepe and roll it to form a neat shape.
Your Roti Jala is ready to serve with your curry.
The key to making a perfect Roti Jala is to move the cup constantly so that you will not end up with a big blob of batter on your pan, thus resembling a regular pancake as the outcome. You may also use other alternatives if you do not have a special five-nozzle cup.
